Rooibos Slappap (Rooibos Soft Maize Porridge) is a traditional South African recipe for a classic breakfast dish of maize meal cooked to a loose porridge in redbush tea. Slappap is the generic South African name for a soft maize meal porridge. Typically this is served as a breakfast, snack or light lunch dish. The addition of rooibos (redbush) tea gives this pap or porridge a very pleasing reddish colour and a herbal flavour.
Ingredients
1l water
5 redbush (rooibos) tea bags
1 tsp salt
150g mealie meal (white maize meal)
1 tbsp butter
Method:
Combine the water and redbush tea bags to a large, heavy-based saucepan and bring to a boil. Take off the heat, set aside and allow to infuse for 15 minutes.
At this point remove the teabags, then place the tea back on the heat and bring to a boil. Add the salt and, whist whisking constantly, pour in the maize meal in a steady stream. Reduce to a simmer and continue cooking, stirring constantly, for about 15 minutes.
Add the butter and stir to blend into the slappap. Serve immediately.
f serving for breakfast you can serve with honey or sugar as a sweetener, milk for cooling and sliced bananas or other fruit as an addition.
