Rooibos Iced Tea

Rooibos tea is just as much enjoyed in Namibia as it is in South Africa. This is an iced version of said tea, flavoured with ginger and sweetened with a little honey. It’s served garnished with lemon and lemon balm leaves.

Ingredients:

3 rooibos tea bags
50g fresh ginger, peeled and finely minced
1.5l boiling water
1 large lemon
fresh lemon balm leaves plus extra for garnish
1 cup ice cubes
3 tbsp honey
1.5l cold water, to dilute the tea

Method:

Combine the rooibos tea bags, ginger and honey in a heat-proof bowl then pour over the boiling water. Cover and allow the ingredients to steep and cool until you can touch the bowl with your hand.

At this point, cover the bowl, set aside in the refrigerator and allow to cool over night.

Thirty minutes before serving, pour the tea from the bowl into a serving jug. Fish out the ginger and tea bags and set aside. Pour over the cold water and add in the ginger and tea bags along with the slices of lemon and the lemon balm leaves. Add in ice cubes to keep chilled and allow to infuse for 30 minutes.

Pour the iced tea into glasses containing ice cubes and a few lemon balm leaves.
