Roasted Maize is a traditional Nigerian recipe for a classic accompaniment of maize (corn on the cob) that's dusted with chilli powder, brushed with oil and oven baked until cooked. The full recipe is presented here and I hope you enjoy this classic Nigerian version of: Roasted Maize.

Ingredients:
4 whole corn cobs
hot chilli powder, to dust
groundnut oil for brushing
Method:
Bring a pan of lightly-salted water to a boil. Add the maize and boil for about 5 minutes, or until just softened.
Remove from the pan, brush with groundnut oil and dust with hot chilli powder, to taste. Place on a roasting tin and transfer to an oven pre-heated to 180°C. Bake for about 25 minutes, or until cooked as dark as you like them.
