Riz à l'Huile de Palme (Rice with Palm Oil) is a traditional Congolese recipe (from Democratic Republic of the Congo) for a classic accompaniment of boiled rice finished with red palm oil. Ingredients:
500g long-grain rice
750ml water
3 tbsp red palm oil
salt, to taste
Method:
Wash the rice thoroughly and rain in a colander.
Bring the water to a boil, season to taste with salt then stir in the rice. Reduce to a simmer, cover and cook for 10 minutes.
Stir in the palm oil then cover the pot and simmer for 15 minutes more, or until the rice is tender. If the rice is not dry, remove the lid and cook gently for about 10 minutes more.
Fluff the rice and serve hot as an accompaniment to grilled meat or grilled fish.
