Riz à la Cannelle (Rice with Cinnamon) is a traditional Ivorian (from Côte d'Ivoire) recipe for a classic pudding of rice cooked in milk and flavoured with sugar and cinnamon. This is an Ivorian version of rice pudding, rice blanched in water that's cooked in milk, flavoured with cinnamon and served to accompany candied fruit.
Ingredients:
500ml water
300g long-grain rice, washed well and drained
1l milk
75g powdered sugar
2 heaped tbsp ground cinnamon
Method:
Bring the 500ml water to a boil, add the rice, bring back to a boil and cook for 5 minutes. Drain the rice and set aside.
In the meantime, bring the milk to a boil in another pan. Stir in the rice and cook for between 12 and 15 minutes, or until the rice is tender.
Take off the heat and stir in the powdered sugar and cinnamon. Serve either hot or cold, accompanied by candied fruit.
