These are the classic Vietnamese rice paper wrappers for Spring Rolls.

Ingredients:

120g rice flour
60g tapioca starch
360ml water
1/2 tsp salt
1 tbsp vegetable or coconut oil

Method:

Combine the rice flour, tapioca starch and salt in a large mixing bowl, stirring until evenly blended.

Gradually pour in the water while whisking continuously to avoid lumps. Aim for a smooth, pourable batter.

Whisk in 1 tbsp of vegetable or coconut oil until evenly distributed throughout the batter.

Allow the batter to sit for 30 minutes at room temperature. This step helps the starches hydrate fully for better texture.

Heat a non-stick frying over medium heat. Lightly grease it, with oil then pour in a small amount of batter (about 4 tbsp), swirling it to cover the surface evenly.

Cook for 2-3 minutes until the edges lift and the wrapper is translucent.
