Raspberry Drops is a traditional New Zealand recipe for a classic small dough-based cakes with a raspberry jam (jelly) filling. The full recipe is presented here and I hope you enjoy this classic New Zealand version of: Raspberry Drops.
Cream together the butter and icing sugar until pale and creamy, then add the dry ingredients and mix well. Roll the resultant dough into small balls and place on a cool oven tray and press a hollow in the centre of each.
Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 8 minutes, remove from an oven and whilst still hot fill each hollow with jam before returning to the oven for a further 4 minutes.
Take out, allow to cool a little then place on a wire rack to cool completely.
