Method:

This is a classic Malagache drink that is made from the burnt rice left in the base of the earthenware pot after cooking. So popular is this drink that most Malagasy cooks will double the amount of rice that they prepare just to make it. When the rice is done, the majority is removed from the pan, but a layer about 1cm thick is left. This is heated until the rice becomes burnt and acquires a characteristic nutty aroma.

At this point, boiling water is poured over the rice in the pan and the mixture is brought to a boil. The pan is then taken off the heat and is allowed to cool before being strained and chilled. This is the staple drink of Madagascar, used for every meal where water or tea would be drunk elsewhere.
