Pupusas are thick corn masa cakes stuffed with a savoury filling. Pupusas can be filled with pork, cheese, refried beans or all three which are called ‘revueltas’. They are served with curtido and a delicious non-spicy tomato salsa. They count amongst El Salvador’s national dishes.
Ingredients:
300g Masa Harina (fine maize flour)
1/2 tsp salt
375ml water
mozzarella cheese, grated
vegetable oil
Method:
For the masa: Combine the masa harina and salt in a bowl, mixing well to combine. Slowly add the water and mix with your hands for about 5 minutes or until you get a smooth and moist dough.
Divide the dough into 6 equal sized balls.
Put one ball of dough between two sheets of plastic. Use a heavy pan to flatten the ball a bit (don't make it too flat).
Add as much grated cheese as will comfortably fit on the dough. Fold the dough over, as if making an empanada. Use the plastic to help you do this.
Bring the open ends of pastry together then shape into a smooth ball.
Moisten your hands with a little water or oil and use your palms to flatten the filled ball of dough into a thick tortilla.
Sit this shaped pupusa on a large baking tray, then repeat the above steps with the remainder of the dough balls.
Heat a heavy-based frying pan over medium heat. Coat the pan with enough oil to keep the pupusa from sticking.
Once the oil is hot add a pupusa and cook for 3-4 minutes. Then flip and cook for an additional 3-4 minutes or until the pupusa is nicely browned and cooked through.
Transfer the pupusa to a paper towel lined plate and repeat the above steps with the remaining five balls.
Add more oil as needed to keep the pupusas from sticking.
