Pratie Oaten

This recipe is for a classic Irish potato cake, with the twist, in this case, that they are prepared and cooked as triangular wedges.

Ingredients:

450g cooked potatoes, thoroughly mashed until smooth
240g fine oatmeal
salt and freshly-ground black pepper, to taste
milk, as needed

Method:

Combine the potatoes and oatmeal in a bowl. Season to taste then work in just enough milk to form a soft dough.

Turn this out onto a work surface lightly dusted with oatmeal and roll out to about 2.5cm thick. Cut into triangles.

Heat an ungreased griddle pan or heavy-based frying pan. Add the potato oatcakes and cook for about 4 minutes per side, or until golden brown and cooked through.

Serve hot with butter.
