Potato Fans

Potato Fans is a traditional British recipe for a classic barbecue accompaniment of potatoes that are sliced across, wrapped in foil and cooked over hot coals until tender and which are fanned open before serving. Here is an interesting potato accompaniment — essentially a roast potato that can be cooked on your barbecue.

Ingredients:

6 large potatoes, scrubbed clean but not peeled
1 tsp garlic, minced
2 tbsp olive oil

Method:

Mix together the oil and garlic and set aside to infuse for at least 2 hours (over night is best).

Using a sharp knife made a series of cuts across the potatoes, cutting almost all the way through.

Cut 6 squares of kitchen foil (each one needs to be large enough to enclose one of the potatoes).

Place a potato on each square of foil and brush generously with the garlic olive oil. Fold up the sides of the foil to completely enclose the potatoes.

Arrange the potatoes on a pre-heated barbecue over hot coals. Cook, turning occasionally for about 60 minutes or until tender.

To serve, open up the parcels and pinch the potatoes gently to open up the fans.
