Potage aux Fruits de Pain (Breadfruit Soup) is a traditional Congolese recipe (from Democratic Republic of the Congo) for a classic soup of breadfruit and bacon cooked in a milk base. Ingredients:
1 breadfruit
500ml milk
100g bacon, boiled for 10 minutes to desalt and diced
salt, freshly-ground black pepper and freshly-grated nutmeg to taste
oil for frying
Method:
Peel the breadfruit and chop into pieces. Bring a pan of salted water to a boil, add the breadfruit and cook for about 20 minutes, or until tender.
Drain the breadfruit, turn into a bowl, mash and set aside.
Heat a little oil in a pan, add the bacon and fry for about 5 minutes, or until browned. Add the mashed breadfruit and cook for 10 minutes, stirring constantly.
Stir in the milk, season with salt, black pepper and nutmeg, bring to a simmer and cook for about 5 minutes or until all the ingredients are thoroughly hot.
