Ingredients:

4 under-ripe bananas
80g grated hard goat's cheese
250ml milk
1 tsp lard or margarine

Method:

Peel and slice the bananas. Bring a pan of water to a boil, add the bananas and cook for about 20 minutes or until just tender. Drain and pass through a food mill.

Turn into a saucepan and mix with the milk. Bring to a boil and add the fat. Cook, stirring constantly, for 5 minutes then add the grated cheese.

Serve hot.
