Pork Tenderloins with Adobo Sauce is a traditional American recipe for a classic dish of pork tenderloins marinated in adobo sauce that is oven baked in a finished in adobo sauce with chicken stock, onion, garlic, cream and dark chocolate before being sliced and served. Trim the pork and place in a dish along with 100ml adobo sauce. Turn the meat to coat with the sauce then refrigerate for 2 hours (up to 4 hours) to marinate.
Add 2 tbsp oil to a large pan and when hot use to fry the pork until golden brown on all sides. Transfer to a roasting dish and place in an oven heated to 170°C (325°F/Gas Mark 3), allowing to cook for 12 minutes. Remove from the oven and allow to rest for 5 minutes.
Add the remaining oil to a medium saucepan and use to fry the onion and garlic for about 4 minutes, or until soft. Add the remaining adobo sauce and cook for a minute, stirring all the while, before adding the chicken stock and double cream. Continue cooking gently until the sauce is thick enough to coat the back of a spoon (about 8 minutes) then add the chocolate and stir until melted.
Slice the pork and arrange on a plate. Adjust the seasoning of the sauce then drizzle around and over the meat and serve accompanied by refried beans.
