Begin by preparing the garnish. Trim the spring onions into 8cm lengths. Now slice both ends (only the ends though) into strips. Place the spring onions in a bowl of iced water and set aside to soak for at least 30 minutes. The ends of the spring onions will curl attractively, leaving the centres intact.
Separate the spare ribs into individual riblets. Bring a pan of water to a boil, add the ribs and cook for 5 minutes then drain thoroughly.
Heat the oils in a pan, add the garlic and ginger and stir-fry for about 90 seconds, or until aromatic. Now stir in the plum sauce, sherry, Hoisin sauce and soy sauce. Bring to a simmer then take off the heat.
Allow to cool slightly and brush liberally over the pork ribs. Place on a hot barbecue and cook over hot coals for between 5 and 10 minutes. At this point, transfer the ribs to a cooler part of the barbecue. Continue cooking for about 15 minutes more, turning and basting frequently with the left-over plum mix.
Transfer to a serving plate, garnish with the spring onions and serve immediately.
