Ingredients:
1kg pork roasting joint
80ml soy sauce
120ml vinegar
2 medium onions, chopped
1l water
1 tsp salt
Method:
Place the pork in a flame-proof casserole then pour in the water and add the salt. Bring the mixture to a boil, reduce to a simmer then cover and cook for 20 minutes, or until the pork is tender and the skin is soft.
At this point remove the pork from the pot an cut into bite-sized pieces whilst still hot. Place the meat in a bowl and add the vinegar, soy sauce and chopped onions. Serve immediately.
