Poorees

This is a classic Indian flatbread (also spelled Puri) that is typically served as an accompaniment.

Ingredients


500g wholemeal flour
250ml water (about)
pinch of salt

Method:

Mix the flour and salt in a bowl, form a well in the centre then pour in 200ml of the water. Mix together then add enough of the remaining water to bring the flour together as a stiff dough.

Pinch off small pieces of the dough and roll into balls the size of a marble. Place on a lightly-floured work surface and roll out into disks about 10cm in diameter. Place the doughs on a plate, cover with clingfilm (plastic wrap) and set aside in a warm place to rest for 30 minutes.

After this time, place a large frying pan over high heat and add ghee to a depth of 1cm. When the oil is hot, add the poorees a few at a time, frying until golden brown on one side. Then turn over and fry until golden brown on the other side.

Drain on kitchen paper and serve immediately. To be at their best, poorees need to be served piping hot.
