Plantain Seed Mix is a traditional British recipe for a classic wild food base snacking seed mix of lightly toasted plantain seeds, pumpkin seeds and sesame seeds flavoured with soy sauce, smoked paprika and sea salt. The seeds of plantain species (ribwort, greater and sea) have a quite delicious nutty flavour (which is why they have historically been used as flour adulterant). Here they're combined with hulled pumpkin seeds and sesame seeds and flavoured with a little soy sauce and smoked paprika to make a delicious snack. Toasting intensifies the flavour.
Ingredients:
65 of plantain seeds (greater, ribwort or sea)
210g pumpkin seeds
210g of sesame seeds
generous splash of soy sauce
1/4 tsp smoked paprika
1/2 tsp sea salt
Method:
Mix the seeds together then toast in a non-stick frying pan until lightly coloured and aromatic.
Add a generous dash of soy sauce and stir coat the seed mix, allowing any excess soy sauce to evaporate. When the pan is almost dry, scatter over and stir in the smoked paprika and sea salt.
