This is a classic recipe for a Victorian version of Ale Posset that's derived from Robert Kemp Philp's 1859 volume, The Dictionary of Daily Wants. Below you will find both the recipe in its original form and a modern redaction.
Original Recipe
Boil a pint of new milk with a slice of toasted bread; pour a bottle of mild ale into a punch bowl, sweeten and add spices, and then pour the boiling milk onto it.
Add the milk, bread honey and cinnamon to a pan and bring to a boil. In the meantime, whisk the ale, nutmeg, mace, ginger and cloves together in a punch bowl. When the milk is boiling take off the heat and pour over the ale. Serve warm.
