Philippines Banana Bread

Ingredients:

400g plain flour
150g sugar
1 tbsp baking powder
240ml milk
250g finely-mashed banana
1 tsp salt
1 tbsp oil
1 egg, beaten

Method:

Stir together the flour, baking powder, sugar and salt. In a separate bowl combine the egg, milk, oil and mashed banana. Pour this over the flour mixture and stir only enough so that the flour is moistened (do not over-stir as this gives poor results).

Tip the batter into a well-greased loaf pan and place in an oven pre-heated to 190°C for about 75 minutes, or until a skewer inserted into the centre emerges cleanly.

Take out of the oven at this point, allow to cool for 10 minutes then remove from the pan and allow to cool completely on a wire rack before slicing.
