Like most people, I really like scrambled eggs for breakfast, served on toast and topped with hot sauce and/or brown sauce. Some of the best scrambled eggs I'd ever had was in Hong Kong and I've been trying to develop a version that satisfied me for years.

For good scrambled eggs you need to understand a little of the science behind what happens when eggs are scrambled. It works, in the first instance due to the tension between the proteins in the whites and the fats and liquid in the yolk. When heated, the proteins denature and unravel. As the proteins cool they spool up and tighten and this is what can make scrambled eggs tough and rubbery. To keep scrambled eggs creamy you need to stop this process. The commonest way of doing this is to add liquid (typicaly milk).

However, in Asia they add cornflour (cornstarch). Recently I've been working with Greek-style yoghurt in a range of recipes from cakes to sandwich filling and now I've had a go with it in scrambled eggs. The idea was to combine the Western way of adding milk products and the Eastern way of adding cornflour to end up with superlative scrambled eggs.

Ingredients

2 eggs
2 tbsp Greek-style youghrt
1 tsp cornflour
salt and freshly-ground black pepper, to taste
a little butter

Method:

Add the yoghurt to a bowl, scatter over the cornflour then stir into the yoghurt until completely combined. Crack the eggs into the bowl and season to taste with salt and freshly-ground black pepper. Beat with a fork to combine.

Set a small saucepan over medium heat. Once hot add the butter and once melted and foamin add in the egg mixture. Cook, stirring constantly, until the eggs have just set. Take off the heat (the eggs will finish cooking in the residual heat from the pan.

In the meantime toast two slices of bread. Once toasted arrange on a plate. Divide the scrambled eggs between the bread.

Top with your favourite sauce and serve.
