Peaches with Creamy Mascarpone Filling a Classic British recipe for a barbecue dessert of peach halves cooked on a barbecue that are served filled with a blend of mascarpone cheese and nuts.
Ingredients:
4 peaches
175g Mascarpone cheese (or use this site's recipe for home-made mascarpone)
40g pecan nuts or walnuts, chopped
1 tbsp sunflower oil
4 tbsp maple syrup
Method:
Cut the peaches in half and remove the stones.
In a bowl, mix together the mascarpone cheese and the chopped nuts until well combined. Cover and set aside to chill in the refrigerator until needed.
To serve, brush the peaches with a little oil and set on a barbecue rack over medium-hot coals. Barbecue the peach halves for about 4 minutes per side, until heated through.
Transfer the peach halves to a serving dish and top with the mascarpone cheese and nut mixture.
Drizzle over the maple syrup and serve immediately.
