Paprika Potatoes

These are Israeli roast potatoes flavoured and coloured with paprika.

Ingredients:

600g potatoes, cut into chunks
120ml oil
1 tbsp paprika
½ tbsp salt, or to taste

Method:

Bring a pan of salted water to a boil. Add the potatoes and par-boil for 10 minutes. Drain in a colander then shake to rough up the surface of the potatoes (this gives more surface area so the potatoes crisp up).

In the meantime, pre-heat your oven to 200°C, set a roasting tin with the oil in the oven and allow the oil to heat up.

Add the potatoes to the oil, turning them over with a slotted spoon to coat. Sprinkle over the paprika and salt, turning the potatoes until evenly coated.

Return the pan to the oven and roast for 15 minutes. Stir the potatoes at this point then return to the oven for a further 15 minutes of roasting.

Drain on kitchen paper to remove any excess oil then serve.
