Panettone with Mascarpone and Strawberries a Classic British recipe for a barbecue dessert of toasted panettone slices served with strawberries in a masala wine and cinnamon base with Mascarpone cheese.

Ingredients:

225g fresh strawberries
25g caster sugar
6 tbsp Marsala wine
1/2 tsp ground cinnamon
4 slices of panettone
4 tbsp Mascarpone cheese (or use this site's recipe for home-made mascarpone)


Method:

Hull the strawberries, then slice lengthways before placing in a bowl. Add the sugar, Marsala wine and cinnamon and toss gently to coat. Cover and set aside to chill in the refrigerator for at least 30 minutes.

When ready to serve, place the slices of panettone on a greased barbecue rack set over medium-hot coals. Barbecue the bread for about 1 minute per side, or until lightly marked and golden brown.

Transfer the panettone to serving plates. Top the panettone with the mascarpone cheese and the marinated strawberries.

Serve immediately.
