Ingredients:

50g butter
60ml olive oil
2 garlic cloves, minced
1 tbsp shallot, minced
1 1/2 tsp chilli flakes
2 large Dungeness crabs, cooked, cleaned and cracked (about 2kg)
2 tbsp fresh thyme, chopped
2 tbsp fresh parsley, chopped
salt and freshly-ground black pepper, to taste
120ml orange juice (blood orange is best)
1 tsp freshly-grated orange zest

Method:

For how to cook the crabs, see this article on how to prepare a Dungeness crab.

Combine the butter and oil in a large oven-proof frying pan or skillet over medium-high heat. Once the mixture is foaming add the garlic, shallot and the chilli flakes. Stir to combine then add the crabs and season with salt and black pepper. Sprinkle over half the thyme and half the parsley then stir to combine.

Take off the heat then place the pan in an oven pre-heated to 220°C and roast for 6 minutes. Stir the mixture at this point then continue cooking for a further 6 minutes.

After this time, remove the pan from the oven then, using tongs, transfer the crabs to a serving plate. Place the pan on the hob and stir in the orange juice and orange zest. Bring to a boil and cook until the volume has reduced by half then spoon the sauce over the crabs.

Garnish with the remaining thyme and the remaining parsley then serve.
