Oranges Douces de Congo (Sweet Congolese Oranges) is a traditional Congolese (from the Republic of the Congo) recipe for a classic dessert of a blend of oranges, dates and peanuts served in individual ramekins on a bed of coconut flesh drizzled with apricot brandy. Ingredients:

4 thick-skinned oranges
90g dates, chopped
50g peanuts, chopped
80ml apricot brandy or curaçao
250ml moist shredded coconut

Method:

Peel the oranges and cut the flesh into 2cm thick slices. Cut the slices into 1cm dice.

Place the orange pieces in a bowl and mix in the chopped dates and chopped peanuts.

Drizzle over the brandy or curaçao and toss to coat.

Divide the shredded coconut between eight ramekins. Form a well in the centre of the coconut and fill with the orange mixture.

Serve immediately. The mixture can also be used to fill baked apples or can be used as a stuffing for melons or round papaya.
