Ingredients:
160g (1 cup + 2 tbsp) plain flour
2 tbsp brown sugar
1 1/2 tsp baking powder
1 tsp finely-grated lemon zest
2 tsp finely-grated orange zest
15g (1/2 oz) walnuts, chopped
pinch of salt
120ml (1/2 cup) orange juice
2 tbsp butter, melted
1 large egg
Method:
Stir together the flour, sugar, baking powder, lemon zest, orange zest, walnuts and salt in a bowl. In a separate bowl beat together the orange juice, butter and egg.
Add the wet ingredients to the dry ingredients, mixing with a fork until just combined (be careful not to over-mix).
Divide the batter evenly between six large muffin cups well greased with butter. Transfer to an oven pre-heated to 190C (375F, Gas Mark 5) and bake for about 20 minutes, or until golden brow and cooked through.
