Oman Baharat is a traditional Omani recipe for a the classic Middle Eastern spice blend as prepared in the country. The full recipe is presented here and I hope you enjoy this classic Omani version of: Oman Baharat.
Combine the whole black peppercorns, coriander seeds, cardamom pods, cloves, nutmeg, chilli flakes and cinnamon stick in a hot cast-iron pan. Toast until aromatic (about 90 seconds).
Turn out onto a plate and allow the spices to cool before handling. Remove the nutmeg, and grate separately using a microplane. Grind the remaining whole spices into a fine powder either by hand with a mortar and pestle or a spice grinder.
Mix the ground spices, paprika, and grated nutmeg together until throughly mixed.
Store the baharat spice in an airtight container where it will keep for up to a year.
