Old-fashioned Lemon Sugar Cookies

Ingredients:

420g plain flour
2 tsp baking powder
1/2 tsp salt
280g sugar
200g butter, softened
2 eggs
60ml fresh lemon juice
icing sugar for rolling

Method:

Cream the butter and sugar in a bowl until light and fluffy. Beat together the eggs then add to the creamed butter mixture a little at a time, beating well after each addition. Add the dry ingredients to a separate bowl and stir to combine then add to the wet ingredients and stir to combine. Now add the lemon juice and mix thoroughly. Bring the mixture together as a dough then wrap in clingfilm and refrigerate over night.

The following day tear off pieces of the dough and roll into balls about 3cm in diameter and roll these in icing sugar. Place on a lightly-greased baking tray about 5cm apart. Flatten the balls with the base of a glass dipped in icing sugar. Place in an oven pre-heated to 170°C and bake for about 12 minutes, or until lightly golden.

Remove from the oven and allow to cool on the baking tray for 5 minutes then transfer to a wire rack to cool completely.
