No-bake Peanut Butter Flapjack

Ingredients:

160g smooth peanut butter
160g honey
2 tsp vanilla extract
200g rolled oats
50g desiccated coconut
130g pitted dates, chopped
70g mixed seeds, toasted
40g dried cranberries

Method:

Line a baking tin (about 22cm square) win non-stick baking paper then set aside.

Combine the peanut butter, honey and vanilla extract in a saucepan, gently heat, stirring, until the ingredients have melted and are smooth. Take off the heat and set to one side.

Mix together the remaining ingredients in a large bowl, stirring to combine. Now add in the peanut butter mixture, stirring the ingredients together with a spoon, making sure that the dry ingredients are coated, and everything is properly combined. It takes a few minutes to achieve this, but it all all comes together eventually.

Pour the flapjack recipe mixture into the prepared baking tin. Ensure that you press down on and smooth the mixture, pressing it firmly into the corners of the tin. You need to pack the mixture very well, as without butter or syrup this is what holds the final flapjacks together. Transfer the mixture to your refrigerator and leave over-night to fully set.
