Ingredients:
500g self-raising flour
50g caster sugar
3 eggs
25g butter
2 drops vanilla extract
oil for deep frying
Method:
Sift the flour into a clean bowl and rub-in the butter. Beat together the eggs, vanilla extract and sugar then add this slowly to the flour until you attain a dropping consistency.
Scoop a little of the batter at a time into your cupped fingers and drop into hot oil. Fry until golden brown then drain on absorbent kitchen paper and serve.
