New Potatoes in a Honey-mustard Dressing is a modern Channel Islands recipe (from Jersey) for a classic accompaniment of boiled new potatoes in a butter, honey, mustard and lime juice that goes particularly well with barbecued meats. Ingredients:
700g small new potatoes (Jersey Royals are best)
1 tbsp Dijon mustard
3 tbsp runny honey
40g butter
juice of 1/2 lime
1 tbsp finely-chopped coriander (cilantro) leaves, to garnish
Method:
Bring a large pan of water to a boil. Scrub, but do not peel the potatoes then add to the pan and bring bak to a boil. Reduce to a simmer and continue cooking for between 12 and 15 minutes, or until the potatoes are just tender (you should be easily able to pierce them with a sharp knife).
In the meantime, combine the honey, mustard and butter in a pan. Heat until the butter dissolves and stir to blend. Add the lime juice and take off the heat.
Once the potatoes are cooked, drain them in a colander. Return to the saucepan and drizzle over the honey-mustard dressing. Gently toss the potatoes to coat then turn into a warmed serving dish. Garnish with the chopped coriander and serve immediately.
These potatoes make an excellent accompaniment to roast or barbecued meats.
