If you want something a little different from the usual gunpowder mash for Guy Fawkes night (or any winter evening) to go with sausages and gravy, this mustard-flavoured champ is excellent. This classic Northern Irish accompaniment is also great for topping a fish pie, shepherd’s pie or cottage pie.
Ingredients:
1kg potatoes, peeled and quartered
200ml milk
50g butter
1–2 tbsp wholegrain mustard
2 bunches spring onion, washed and sliced
Method:
Boil the potatoes in salted water for 15 mins or until tender. Drain, then mash then shift the potatoes to reveal a clear corner of the pan.
Heat the milk and half the butter in the corner of the pan, then beat into the mash, along with the wholegrain mustard.
Gently fry the spring onions in the remaining butter for 2 mins until just soft but still a perky green.
