(Economical.)

235. INGREDIENTS.—Any remains of cold cod, 12 oysters, sufficient melted butter to moisten it; mashed potatoes enough to fill up the dish.

Mode.—Flake the fish from the bone, and carefully take away all the skin. Lay it in a pie-dish, pour over the melted butter and oysters (or oyster sauce, if there is any left), and cover with mashed potatoes. Bake for 1/2 an hour, and send to table of a nice brown colour.

Time.—1/2 hour.

Seasonable from November to March.

Modern Redaction


Ingredients:

remains of a baked (or poached) cod
12 oysters
100g butter, melted
600g cold, mashed, potatoes

Method:

Flake the fish meat from the bone then remove all the skin. Place the fish in the base of a pie dish or baking dish, arrange the oysters on top then pour over the melted butter. Top with the mashed potatoes then transfer to an oven pre-heated to 190°C and bake for about 35 minutes, or until heated through and coloured golden brown on top.
