Morel Rösti is a traditional Swiss recipe for a classic accompaniment of grated potatoes combined with onions, chopped morel mushrooms and bacon lardons before being fried as a big cake until golden brown. Any edible morel mushroom of any size can be used in this recipe and it also works with most other mushrooms, particularly chanterelles, boletes and Agaricaceae.
Ingredients:
900g potatoes, coarsely grated
80g onions, finely chopped
80g chopped morels
50g lardons (smoked bacon cubes)
50g butter
chopped chives and parsley
salt and black pepper, to taste
Method:
Melt the butter in a pan, add the lardons, morels and onions then fry for a few minutes. Reduce the heat, cover, and allow to sweat until soft (about 10 minutes). Now add the potatoes and half the herbs. Mix to combine, season and tip into a frying pan.
Flatten the mixture into a thick pancake and cook on each side until brown. Sprinkle with the remaining herbs and serve.
