Moo Shu Pancakes is a traditional Chinese recipe for a classic dry-fried pancake made from flour, water, sesame oil and salt. The full recipe is presented here and I hope you enjoy this classic Chinese version of: Moo Shu Pancakes.

These pancakes are also known as 'Mandarin pancakes'
Ingredients:
280g flour
pinch of salt
120ml boiling water
2 tbsp cold water
2 tbsp sesame oil
flour for rolling
Method
Add the flour and salt to a bowl then stir-in the boiling water. Now add just enough cold water so that a dough forms. Tip this onto a lightly-floured surface and knead until smooth (about 10 minutes). Cover with a cloth and allow to rest for 30 minutes.
Divide the dough in half then cut each half into five equal pieces (so you have ten pieces in all). Roll each piece into a ball then using a floured rolling pin roll each ball into an 8cm diameter pancake. Brush each pancake with sesame oil then top with the next pancake.
Heat a dry non-stick pan then fold the pancakes over twice to form a triangle then transfer to the pan. Cook each pancake on both sides until blistered with several air pockets (do not allow to brown). Keep warm and use immediately. Typically, these would be served with moo shu pork.
