Ingredients:

200g light muscovado sugar
90g butter, melted
2 large eggs
4 ripe bananas, mashed
4 tbsp plain flour
1 tsp baking soda
2 tsp ground cinnamon
1 tsp ground ginger
60ml strong, black, coffee (espresso coffee is ideal)
250ml dulce de leche

Method:

Beat together the suer and butter until creamy. Add the eggs, one at a time, beating thoroughly to combine after each addition. Add the mashed bananas and beat to mix in then beat in the flour, baking soda, cinnamon, ginger and coffee.

Turn the batter into a greased and floured cake tin then place in an oven pre-heated to 150°C and bake for about 30 minutes, or until the cake is golden and a skewer inserted into the centre emerges cleanly.

Allow to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely. When cold, place on a serving plate and pour the dulce de leche over the top, spreading it evenly.
