Ingredients:
120g butter
90g granulated sugar
90g light brown sugar
1 tsp vanilla extract
1 large egg
225g plain flour
1/2 tsp baking soda
1/4 tsp salt
1/8 tsp ground nutmeg
120g chopped mixed nuts
1 tbsp granulated sugar
Method:
Combine the butter, granulated sugar and brown sugar in a large bowl and beat together until smooth and fluffy before adding the vanilla and egg, beating until smooth.
Combine the flour, baking soda, salt and nutmeg and stir to combine. Add the flour mixture to the butter mixture and beat together until just combined. Stir-in the nuts then set in the refrigerator to chill for 10 minutes.
Divide the chilled dough into 30 equal portion. Roll each portion into a ball. Place 1 tbsp sugar on a plate and lightly press one surface of the ball into sugar. Now place each ball, sugar side up, on a baking tray covered with greaseproof paper. Gently press the top of each ball twice with the tines of a fork to form a criss-cross pattern (make sure you set the balls no closer than 4cm apart).
Transfer the baking sheets to an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for 9 minutes, or until spread out and lightly golden. Allow to cool for 5 minutes on the baking tray before transferring to a wire rack to cool completely.
