Ingredients:
whites of 3 large eggs
1/4 tsp cream of tartar
1/8 tsp salt
135g white sugar
1/2 tsp vanilla extract
Method:
Line a baking tray with greaseproof paper or parchment paper and set aside. Meanwhile add the eggs to a bowl and beat at high speed with an electric wick. Add the cream of tartar and salt and continue beating until the mixture is fluffy.
At this point gradually add the sugar, beating in to combine with the egg whites after each addition. Finally beat in the vanilla extract. Transfer the egg white mixture to a piping bag fitted with a plain nozzle. Use this to pipe 8cm long bone shapes onto the lined baking tray.
When done, transfer to an oven pre-heated to 95°C. Bake for 1 hour, or until the meringue is set then turn the oven off and allow the shapes to dry in the oven for a further hour. Allow to cool completely then transfer to a plate and serve.
