Masfouf de Tunis (Tunisian Sweet Couscous Snack) is a traditional Tunisian recipe for a classic desert of steamed semolina mixed with raisins, almonds, pine nuts, sugar and grapes that's served at room temperature. Traditionally this dish uses a variant of couscous with finely rolled semolina and butter or olive oil.
Ingredients:
450g fine couscous
240ml water, hot
8 tbsp butter, melted
4 tbs raisins
4 tbsp blanched almonds, halved and toasted
3 tbsp pine nuts
100g sugar
225g seedless grapes
Method:
Combine the couscous and hot water in a bowl. Place in the top of a couscousier (kesskess) or a Chinese-style steamer and steam, covered, over boiling water for 10 minutes.
Transfer the couscous to a bowl then stir in half the butter. Mix and toss with a fork to separate the grains. Return the semolina to the steamer and continue cooking, covered, for a further 20 minutes.
Soak the raisins in hot water for 5 minutes and drain. Remove the couscous then stir in the remainder of the butter then turn the semolina out onto a serving dish. Drain and add the raisins, along with the almonds, grapes and pine nuts then toss together to combine.
Sprinkle the sugar over the top then decorate with a few raisins and nuts. Serve at room temperature.
