Ingredients:
240g butter
150g dark chocolate
1 dried chilli, chopped and ground in a pestle and mortar
60g cocoa powder
150g plain flour
500g caster sugar
5 eggs, beaten
150g marshmallows, chopped
Method:
Combine the butter, chocolate and chilli in a bain-marie (double boiler) and heat until melted. Meanwhile, sift the cocoa powder and flour into a bowl and stir-in the sugar to combine.
When the butter and chocolate has melted and combined take off the heat and stir-in the flour mixture then mix in the eggs until thoroughly combined and fold in the marshmallows. Turn the resultant batter into a 30cm square baking tin lined with parchment paper. Place in an oven pre-heated to 190°C and bake for about 20 minutes, or until the top has set but the brownie still feels a little soft underneath. Set aside to cool and slice into squares.
