Maouchi b'Zaatar (Manoush and Spice Rounds)

Maouchi b'Zaatar (Manoush and Spice Rounds) is a traditional Lebanese recipe for a classic leavened bread that's shaped into rounds, allowed to rise and topped with a mix of oil and zaatar spice blend. Method:

Prepare the Lebanese bread dough according to the recipe and once it has risen knock it back, shape into a ball then turn out onto a floured work surface and knead for 2 minutes. Divide into eight equal portions and roll each piece into a ball. Take each ball in turn and flatten on a floured cloth into rounds about 12.5mm thick. Once they have been rolled out, cover with another floured cloth and set aside in a warm place to rise for about 25 minutes, or until doubled in volume.

After this time form indentations in the dough by prodding the surface with your finger. Grease with the oil then liberally sprinkle the Zaatar spice over the top. Transfer the rounds to lightly-greased baking trays and bake in an oven pre-heated to 230°C for about 12 minutes, or until cooked through and lightly golden.

The bread rounds should be very soft in texture and and can be eaten either rolled up or torn into pieces and consumed with a stew.
