Manitaria Krasata (Mushrooms in Wine)

This dish is an example of the other kind of mezze available on Cyprus, these are zesti mezedhes (hot mezzes). These are served hot in bars and tavernas all over the island to accompany drinks.

Ingredients:

1kg mixed wild mushrooms (traditionally these are gathered from the mountains)
100g butter
120ml dry red wine
1/2 tsp coriander seeds, crushed
salt and freshly-ground black pepper, to taste

Method:

Wipe the mushrooms dry then place in a pan of lightly-salted water and boil for about 10 minutes, or until tender. After this time drain the mushrooms and set aside in a colander.

Melt the butter in a pan, add the mushrooms and fry for a few minutes, or until lightly browned. Add the coriander seeds and fry for 3 minutes then pour in the wine and bring to a boil.

At this point stir in 120ml cold water, bring back to a simmer and cook for about 60 minutes.

Take off the heat, turn into a warmed bowl, season to taste and serve immediately.
