Malvani Masala

Method:

Set a small non-stick frying pan over medium heat and use to dry roast the coriander seeds, cumin seeds, fennel, cloves, cinnamon, cloves, bay leaf, star anise and black peppercorns for about 5 minutes, until nicely toasted. You want their colour to darken slightly, but make sure that do not burn or your curry will turn bitter.

Once done, turn the spices out onto a plate and let them cool. When cooled transfer to a spice grinder and add the dry red chillies and nutmeg. Process to a fine powder then spoon into a small jar.

Secure with an air-tight lid and sore in a cool, dark, cupboard where it will keep for up to three months.
