This is a classic dessert soup made with bananas that originates from Malawi.
Ingredients:
8 ripe bananas
1.5l milk
juice of 1 orange
finely-grated zest of 1 orange
1/2 tsp ground cinnamon
2 tbsp brown sugar
2 tbsp cornflour (cornstarch)
salt, to taste
Method:
Peel the bananas and cut in half. Whisk the cornflour in a bowl with 4 tbsp milk to a smooth slurry. Add half the remaining milk and mix until smooth.
Pour the milk and cornflour mix into a pan and add the bananas, along with the sugar, salt, orange zest and orange juice.
Add all the remaining milk and bring to a boil. Reduce to a simmer, cover and cook for 5 minutes or until the bananas are heated through.
Serve warm.
