This classic butter is typically used as an instant sauce for beef and game. Just place about 1 tsp of the butter on your meat and allow to melt.

Ingredients:

120g butter
4 tbsp flat-leaf parsley, finely chopped
2 tbsp freshly-squeezed lemon juice

Method:

Soften the butter in a bowl then add the parsley and lemon juice. Blend until smooth and thoroughly combined.

Shape the butter mixture into a rough oblong, wrap in greaseproof paper and place in the refrigerator to harden.

You need about 1 tbsp of this mixture for a steak.
