These irresistible walnut biscuits, are prepared throughout the Balkans and this particular version originates in Macedonia. The biscuits are a delightful blend of melt-in-your-mouth texture, and satisfying crunch.
Ingredients:
155g walnuts (it’s best if you buy raw whole walnuts and grind them at home)
155g granulated sugar
1 egg
1 1/2 tsp baking powder
Method:
Pre-heat your oven to 120°C.
Combine all the ingredients in a large bow. Mix well with your hands until the batter feels like wet sand. Shape the mixture into small, sturdy balls (about the size of a large marble) so you get around 30–35.
Line a large baking tray with baking paper. Arrange the balls on the baking tray, setting them some distance apart as they’ll spread out and flatten during baking.
Transfer to the centre of your pre-heated oven and bake for 55–60 minutes. The biscuits are done when they darken slightly and flatten out a little.
Remove from the oven and allow to cool on the baking tray so they harden. Once cooled serve with tea or coffee or store in an air-tight tin, where they will keep for up to two weeks.
