Liberian-style Fried Cabbage is a traditional Liberian recipe for a classic dish of cabbage and mixed meat flavoured with smoked fish, tomato puree and habanero chillies with smoked paprika. This is a classic Liberian dish of fried cabbage with mixed meat that makes a whole dish in an of itself, but which can also be served accompanied by rice.
Ingredients:
200g (7 oz) prawns (shrimp)
300g (2/3 lb) chicken portions
200g (7 oz) smoked turkey
100g (3 1/2 oz) dried fish
100g (3 1/2 oz) smoked fish
1 smoked and dried fish, broken into pieces
4 bay leaves
6 tbsp tomato purée
1 onion, finely chopped
5 habanero chillies, sliced thinly
3 Maggi cubes
1 medium white cabbage, cored cut into wedges and shredded
2 tbsp smoked paprika
2 tbsp black pepper
vegetable oil, for frying
Method:
Combine your mixed meats (except the smoked fish) in a bowl and season with the smoked paprika, 1 tbsp black pepper, 1 maggi cube then stir to combine. Set aside to marinate for 10 minutes then deep fry the chicken to cook and steam everything else for about 15 minutes.
Heat 8 tbsp oil in a large pot and use to fry the tomato purée until it begins to darken. Add the onion and fry for 2 minutes then add the chilli pieces and fry for 2 minutes more. At this point add in the cabbage and stir to combine.
Cover and steam for 5 minutes then season with 1 tbsp black pepper and the remaining Maggi cubes. Stir well to combine then break the dried fish into pieces and stir through the cabbage. Continue cooking for 5 minutes then add the broth from the steamed meats. Now nestle in the bay leaves.
Cook for 5 minutes then add the steamed prawns, smoked turkey and dried fish, stirring into the cabbage. Sit the fried chicken on top, cover and cook for 5 minutes, until everything is heated through.
