Liberian Sour Milk

Ingredients:

750ml (3 cups) plain yoghurt
1l (4 cups) sour cream
200g (1 cup) sugar (you can reduce this by half if desired)
50g (1/2 cup) desiccated coconut flakes
2 tsp lemon juice
2 tsp salt
375ml (1 1/2 cups) whole milk

Method:

Combine all the ingredients in a large bowl. Stir with a spatula to incorporate everything then whisk with a balloon whisk until the mixture is smooth and there are no lumps.

Take a plastic bag and fill one pointed corner with the milky mixture (about 125ml/1/2 cup). Twist to secure the liquid in the corner of the bag then tie off. Repeat until all the mixture has been bagged (you should get 18 bags).

Transfer the bags to your freezer and freeze over night, until solid. At this point you can remove the plastic and return the sour milk cones to the freezer.

Serve as a chilled dessert or snack.
