Lemon Freeze is a traditional British recipe for a classic dessert of lemon-flavoured condensed milk frozen around a cornflake crumb base and topping that's sliced into wedges to serve. The full recipe is presented here and I hope you enjoy this classic British version of: Lemon Freeze.

Ingredients:
60g cornflakes, crumbled
5 tbsp caster sugar
30g butter, melted and cooled
2 eggs, separated
225g tin sweetened condensed milk
4 tbsp lemon juice
Method:
Blend together the cornflakes, 2 tbsp caster sugar and butter in a bowl until thoroughly combined. Reserve 4 tbsp and press the remainder into the base of a plastic freezer-proof box.
Now beat the egg yolks in a large bowl until pale, thick and creamy. Beat in the condensed milk then add the lemon juice and stir until thickened. In a separate bowl beat the egg whites until stiff (but not dry). Gradually beat the remaining caster sugar into the egg whites then fold into the egg yolk mix. Spoon on top of the cornflake base then sprinkle with the remaining cornflake crumbs and freeze until set.
